While the strawberry filling cools, let’s whip up the cheesecake filling:
- Gather Your Ingredients:
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- ½ teaspoon vanilla extract
- 1 large egg yolk
- A pinch of salt
- Mix It Up:
- In a mixing bowl, beat the softened cream cheese until smooth.
- Add the sugar, vanilla extract, egg yolk, and salt. Beat until well combined and creamy.
- Set the filling aside; we’ll use it shortly.
Assembling the Turnovers
Now that you have both fillings ready, it’s time to assemble the turnovers.
- Prepare Your Dough:
- You can use pre-made puff pastry or pie crust. Roll it out on a lightly floured surface.
- Cut the Dough:
- Cut the dough into squares, about 4×4 inches each (you’ll likely get 8-10 squares).
- Spoon a tablespoon of cheesecake filling onto the center of each square, followed by a tablespoon of strawberry filling.
- Seal the Turnovers:
- Fold the dough over to form a triangle, sealing the edges by pressing with a fork.
- Make a few slits on top for steam to escape.
