Blueberry Muffin Cookies with Streusel Topping

  1. Combine flour, brown sugar, cold butter cubes, cinnamon, and salt.
  2. Cut the butter into the mixture with a fork or pastry cutter until you have pea-sized crumbs.
  3. Refrigerate while you prepare the cookie dough.

Prepare the cookie dough

  1. Beat the softened butter with brown sugar and granulated sugar until light and fluffy (2–3 minutes).
  2. Mix in the egg and vanilla.
  3. In another bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry mixture to the wet ingredients, stirring just until combined.

Add the blueberries
Gently fold in the fresh blueberries, taking care not to crush them.

Shape & swirl

  1. Scoop rounds of dough onto a parchment-lined baking sheet.
  2. Add a small dollop of blueberry jam on top of each and swirl lightly with a knife or toothpick.

Top with streusel
Generously sprinkle the chilled streusel over each cookie, pressing gently so it adheres.

Bake
Bake at 375°F (190°C) for 12–15 minutes, until lightly golden but still soft in the centers.

Cool & enjoy
Allow the cookies to cool completely before serving.
