Make the Chicken Mixture: In a large bowl, combine the shredded chicken, Dijon mustard, and egg. Mix well until everything is evenly incorporated.
Shape the Fritters: Use your hands or a spoon to form the chicken mixture into small patties or fritters, about 2 inches in diameter. Place them on a plate or baking sheet.
Heat the Oil: Heat about 1/4 inch of oil in a large skillet over medium-high heat. The oil is hot enough when a small piece of the mixture sizzles when dropped in.
Fry the Fritters: Carefully add the fritters to the hot oil, making sure not to crowd the pan. Fry for 3-4 minutes per side, or until golden brown and crispy. Transfer the cooked fritters to a paper towel-lined plate to drain any excess oil.
